Validation is something I purposefully left out because it is something specific to applications and people have different preferences. I may end up with an optional module that does validation the way I like it, am exploring that, but I basically follow the ideas posted here:

Theming should not be any different regardless of whether you are using Jounce. I'm also updating my personal web page to use the navigation framework with a theme and Jounce so that example should help when it is finished.
